American doctors from the University of California found that the compound of plant origin quercetin, which is rich in pickled capers are often included in pizza, sauces, salads, regulates the activity of proteins required for the normal functioning of the cardiovascular system. There is also a link affects the brain, thyroid, pancreas and gastrointestinal tract.

According to the Professor of the Department of physiology and Biophysics at the University of California Jeffrey Abbott, a bioflavonoid of plant origin quercetin in control of the so-called ion channels potassium KCNQ gene.
