It is Olivier Perret, chef of the Le Renoir restaurant at the Sofitel hotel in Montreal, who signs the new dishes offered in Air France Business class on departure from all of its Canadian stops: Montreal, Quebec, Toronto, Vancouver and soon Ottawa (starting June 27).

The chef has created six unique dishes for Air France, some of which are vegetarian. Business class passengers will be able to discover over the coming months dishes where he combines French gastronomy with Quebec ingredients.

There’s the fluffy risotto with oyster mushrooms and Portobello, green beans and Parmesan; a maple squash and pine nut mille-feuille with cheddar cream; a fillet of guinea fowl and roasted pistachios with squash and Quebec apple; a tarragon-crusted chicken breast and fondant glazed apples with pan-fried chanterelles and blueberries; a chicken stew with crunchy baby vegetables and mushrooms in a creamy tarragon sauce; and finally, pearl barley with kale, with a runny heart of Quebec cheese and roasted root vegetables.
