For the quality of milk and its suitability for making cheese meets gene Kappa-casein. It affects the quantitative content of protein in milk, it clotting, and ultimately to the consistency, aroma and taste of cheese. Scientists of the Siberian Federal scientific center of agrobiotechnology (CPNCA) Russian Academy of Sciences, together with colleagues from the Novosibirsk state agrarian University (ngau) evaluated the effect of the genotype of Simmental cows on milk quality and high milk production.

According to the head of the laboratory of Siberian research and technological Institute of animal husbandry SFNCE RAS Galina Goncharenko, KAPA-casein represented by three genotypes: AA, AB and BB. The last type the correct feeding and keeping the cows gives a high quality of raw materials. Most commonly it is found in the Simmental breed, but in one herd of animals with the desired genotype can be a lot of the other almost can not find.

Perhaps this is due to the fact that pure “Simmental” today are becoming increasingly rare, they are almost everywhere crossed with a red-and-white Holstein breed. And yet, preliminary estimates indicate that cows with genotype BB not only give a suitable cheese milk, but it is greater. Scientists have conducted tests on three groups of animals with genotypes of Kappa-casein AA, BB and AB respectively.
