For the quality of milk and its suitability for making cheese meets gene Kappa-casein. It affects the quantitative content of protein in milk, it clotting, and ultimately to the consistency, aroma and taste of cheese. Scientists of the Siberian Federal scientific center of agrobiotechnology (CPNCA) Russian Academy of Sciences, together with colleagues from the Novosibirsk state agrarian University (ngau) evaluated the effect of the genotype of Simmental cows on milk quality and high milk production.
According to the head of the laboratory of Siberian research and technological Institute of animal husbandry SFNCE RAS Galina Goncharenko, KAPA-casein represented by three genotypes: AA, AB and BB. The last type the correct feeding and keeping the cows gives a high quality of raw materials. Most commonly it is found in the Simmental breed, but in one herd of animals with the desired genotype can be a lot of the other almost can not find.
Perhaps this is due to the fact that pure “Simmental” today are becoming increasingly rare, they are almost everywhere crossed with a red-and-white Holstein breed. It is believed that this increases the level of production, however, according to experts, holstengate and can give a negative effect. Scientists assume that their research will offer new ways to look at this practice and the Simmental breed in General.
We studied the effect of holsteinische on the occurrence of two genes that are associated with qualitative indicators of milk. This Kappa-casein and beta-lactoglobulin gene that is associated with the content in milk of fat and protein. After mating in the first generation the frequency of desirable genotypes like that, and the other gene fell by 6-8 percent – said Galina Goncharenko.
to Study the effect of the “cheese” of the genotype on the amount of milk given by invited specialists of the Novosibirsk state agrarian University. As emphasized by the University Professor, doctor of biological Sciences Nikolay Kochnev, the importance of the study is that every economy aims to increase productivity of cows, but high yields do not necessarily have to bear a loss of quality. Therefore, the scientists intend to find out, will not decrease if the level of production, if we increase the proportion of occurrence of the desired genotype in generations.
We got the data on the two animals and found that there is an Association between the BB genotype of Kappa-casein and high milk yield. Though definitive conclusions to do while early, the only work is preparing for publication, – says Nikolay Kochnev.
And yet, preliminary estimates indicate that cows with genotype BB not only give a suitable cheese milk, but it is greater. Scientists have conducted tests on three groups of animals with genotypes of Kappa-casein AA, BB and AB respectively. Compared to the level molochnoy productivity in different periods of life, beginning with the first milking. Criteria serve as daily and weekly milk yield, content of milk protein and fat and other indicators.
According to scientists, to increase the frequency of genotype BB in a population of animals of the Simmental breed can have in a generation. To do this purposefully to select sires with the desired variant of a gene.
